Does Nikon Capture NX2 save a larger JPG preview in the NEF?

Yes. However for a bit more scientific answer I will use Preview Extractor to extract the JPG's from the images before and then after a save with Capture NX2. It should be noted that with Nikon Capture, this (save large preview for NEF files) was an option in the application.

All of them have 96 dpi both horizontally and vertically, and are at 24 bit depth. All versions (NEF/JPG) have an image size of 2832 X 4256.
